I’m a born-and-bred Texan, so guacamole is essentially my fifth food group (together with salsa and queso). It’s a staple as necessary as olive oil in my kitchen. Seriously, what’s not to love about this healthy, yummy, easy-to-make dip? Loaded with nutrition and healthy fats (yes!), it spices up or cools down any number of dishes, and is perfect paired with a salty tortilla chip.
I’m always amazed by the number of guacamole recipes I see — well, I guess that’s true of any food these days! From magazines to blogs to TV shows, everyone has a gourmet version of this tex-mex staple – often with lots of dicing and chopping involved. Hmmm… I admit I have yet to find a guacamole that I don’t like, but I still favor my super-simple Super Easy Guacamole Dip recipe… just like my mom makes.
Super Easy Guacamole Dip Recipe
You’ll Need:
1 Large Ripe Avocado – slightly soft to the touch
1-2 Heaping Tbs of Your Favorite Salsa, Picante or Taco sauce (or whatever is in the fridge)
Big Dash of Garlic Salt (Note — guacamole needs salt to marry the flavors. This is what most recipes lack!)
1-2 Tsp Lemon Juice to taste (Lime juice works, too, just a little different tang)
To Make:
Cut around your avocado to the pit and split the halves. Chink your knife into the pit and twist to remove. Peel the halves by hand (if still firm) or scoop flesh out with a spoon (if very soft).
Place halves in bowl and roughly mash with a dinner fork.
Add the Salsa, Dash of Garlic Salt, and Lemon or Lime Juice. Blend with fork to desired consistency.
See? Seriously, five minutes or less!
Serve with corn tortilla chips, alongside fajitas or tacos, or as a sandwich / hamburger spread.
Chunky Variation
Dice 1/2 Small Onion, 1 Med. Fresh Tomato and another Avocado and gently fold into your Guacamole base.
Add Even More Zip!
Splash on some Sriracha Spicy Chile & Garlic Sauce for color and a tangy finish! Yumm!
